We adore baking at our house. It is actually relaxing for me personally and the troops, adore the result of my meditation.
Each week I aim to make 1-2 baked items for afternoon tea or lunchboxes. This scrummy basic cake recipe is delicious with a slightly different flavour with the honey, which we all adore. It is light and sweet and nurturing.
Some folks might feel uncomfortable about cake in a lunchbox. Have you check the ingredient lists for some of the “lunchbox” snacks in the supermarket lately?
My Nana used to say, “There is nothing more pure than whole butter, eggs, and sugar”. Wholefoods right ! You can definitely reduce the sugar if you needed to, up the egg and add a little more fruit for fibre. Homemade cakes are simple and such a lovely way to show love and that is all it needs to go into my kids lunchbox. Along with fruits and veg and something else for their main.
With 1/2 cup of sugar, and 12 serves, there is just over 2 teaspoons of sugar per serve.
We have been adoring this raspberry honey cake, today with a little chocolate too.
Raspberry and Honey Cake
What you need is:
125g soft butter
1/4 cup of sugar (or the likes)
1/4 cup of honey
2 eggs
1 tsp of vanilla
1/2 cup of milk
1 1/2 cups of flour
2 tsp of baking powder
2 tbsp of cocoa
1/2 cup of raspberries
What you need to do is:
1. On high speed, beat the butter and sugars (that is the honey too) together until soft and the colour slightly pales.
2. Reduce the speed and add in the eggs one by one, mix, the vanilla, mix and the milk.
3. Slowly add in the flour, baking powder and cocoa on a medium mix. Scrape down the sides and re mix.
4. Grease and flour your tray and pop in the mixture. Sprinkle the raspberries on top and pop the tray into a preheated 180 degree Celsius fan oven.
5. Cook for approximately 40 minutes or until it springs back on a light “pop” on the finger.
And then try not to devour it all in one sitting!
