What? Yoghurt dough you ask.

I know right!

How have I never made this dough before, it is SOOOOOO easy (and I am all about easy) and really yummy.

Then cinnamon scrolls. Oh my. Scrummy-oshous.

To make 8 scrolls….

What you need is for the dough is:

  • 1 1/2 cup of SR flour (  today we used wholemeal spelt with 1 tsp of baking powder)
  • 1 cup of yoghurt (we used greek but you could use natural. I think vanilla would make it too sweet)
  • 4 tbs of brown sugar
  • 50g of soft butter
  • 1/2 tsp of cinnamon

Optional glaze:

  • 4 tbs of icing sugar
  • 2 tbs of milk
  • 1/4 tsp of vanilla essence of somesort

(make kids don’t like icing so next time I won’t use this)

 

What you do is:

  • Mix the flour and yoghurt together with a spoon and turn it out onto some extra flour on the bench to knead it.
  • With the kids I always separate it out into their own ball to knead and then bring it back into the main ball.
  • Knead for around  5 minutes, adding extra flour if it is sticky.
  • Roll the dough out roughly into a rectangle and around 1cm in thickness.
  • Mix together the butter, cinnamon and brown sugar, melt it slightly if need be, and spread it onto the dough.
  • Roll up the dough along the long side.
  • Cut into 8 pieces and place them onto a baking tray.
  • Pop the tray in a 180 degree oven for around 20-30 minutes.
  • If you would like a glaze post cook, mix the icing sugar, milk and vanilla together and drizzle over the cooked scrolls.
