We are forever looking for simple, easy and storage friendly, make-in-advance lunchbox snacks.
I love making my own so I know what is in it and reduce packaging waste.
These little puffed slices are delicious and also gluten free if you need that in your family.
Also just a note, I use to be able to buy the puffed rice and corn at Woolies and Coles but more recently I could only find it at Coles.
? 2 cups of puffed corn (Abundant Earth)
? 2 1/2 cups of puffed rice (Abundant Earth)
? 3 tbs of tahini
? 3 tbs of honey/rice malt syrup/maple
? 100 grams of butter/coconut oil
? 1 tbs of cocoa/cacao powder
Blitz half a cup of rice puffs in the blender then add them to a bowl with the remaining rice puffs and puffed corn.
Over a low heat, melt and stir the tahini, sweetness, fat and cocoa together until all combined.
Pour the warm chocolatey goodness over the puffies and stir through until covered.
Spoon the mixture into a lined tray and then cover and pop in your freezer for a minimum of 30 minutes to firm up.
I keep mine in the freezer for a few weeks until all eaten.
