Simple and quick lunchboxes are essential when you are a busy family on the go.
One of my favourite way to achieve simple and quick lunchboxes, is by using leftovers because #leftoversarelife.
You will see in this lunchbox that there are leftovers, parmesan chicken nuggets, but there are also the other key features that I list in this lunchbox post.
- Eat nude
- Eat plants
- Eat a variety of food groups
- Eat a rainbow
- Drink water
Before we get to the parmesan chicken nugget recipe, you will also see some little unicorn bliss balls which there is a recipe here. You can switch up the ingredients based on what your dietary requirements are or perhaps like me, what is in the pantry.
Drum roll…..time for the chicken nuggets recipe. These can be easily egg free and gluten free too.
Parmesan Chicken Nuggets
What you need is:
- 500g of chicken breast or thigh
- ½ cup of shredded parmesan cheese
- Optional 1 whisked egg
- Optional ¼ cup of bread crumbs or corn crumbs
- 2 tbs of olive oil
What you do is:
- Dice up the chicken into desirable size. Remember that the chicken will shrink as you cook it.
- If you are using breadcrumbs than mix the breadcrumbs with the parmesan cheese in one bowl.
- If you are using egg then crack the egg into a separate bowl and whisk it slightly.
- Dip the chicken bits into the egg.
- Roll the dipped chicken in the breadcrumb cheese mixture
- Lay the coated chicken on a lined baking tray and repeat.
- Drizzle the olive oil over the top.
- Pop the tray in a 200 degree oven for 10 minutes. Cook until cooked through and also turning golden on top.
If you are not using the egg but still the breadcrumbs, then replace step 4 with dipping the chicken into the olive oil. Repeat steps 5, 6 and 8.
If you are not using the egg or the breadcrumbs than replace step 4 with dipping the chicken into the olive oil and then dip it into the parmesan cheese only. Then repeat 7 and 8.
And enjoy!
We often eat these with either roast potatoes and salad or sometimes rice and roasted veggies or even wrapped in a Mexican style burrito.
