A few weeks ago at our Foodie Nature Play playgroup, we made some pumpkin pancakes. They were such a hit that I wanted to share HOW EASY they are to make.

When we make them with children, the steps and quantities are different as each child is part of the process.

But if you would like to make a batch of pumpkin pancakes at home, then this video is for you.

 

What you need is:

  • – 1 cup of roasted pumpkin
  • – 1 1/2 cups of flour
  • – 1-2 tsp of baking powder
  • – 1 cup of milk
  • – 1 large (or 2 small eggs)
  • – Butter/oil for frying
  • – Perhaps some honey or cinnamon to pop on top afterwards
