Veggie Pot Pies

In Australia, only 6.8% of the population are eating the recommended serves of vegetables each day. This is why you will find a lot of vegetarian recipes on this site as a way to promote and normalise vegetables and vegetarian foods, with the aim of children and adults eating more of them each day.

Lentils are a legume and they are fascinating as they fall into two food groups as they are a source of protein as well as a vegetable. A perfect combination for growing bodies.

What you need per child is:

– 1-2 button mushrooms
– 2 olives
– A few leaves of fresh herbs
– 2 tbs of diced tomatoes
– 2 tbs of canned lentils
– 1/4 slice of puff pastry
– a dash of milk
