That is one scrummy easy chicken nugget. And I have a doozy of a simple recipe for you below. With both family and childcare quantities.
But first, the back story goes a little like this.
My kids don’t really eat nuggets. Even homemade ones as I scarred them. Back when we were moving from Newcastle to Sydney many moons ago, we were finishing renovations off and selling our house and all that jazz. We would drive up and down, sometimes in a day.
One day I hadn’t any food and of course the Golden Arches were beaming so I drove in and thought, the nuggets can’t be too bad. Bought the little clam shell and the kids spat them back out. They were really hungry so I tried to coax them a little more and they told me they were yucky!
How’s that. A nutritionist tried to coax her kids to eat the golden arches’ nuggets. That’s a tale!
Since then, my kids joke that I forced them to eat them! The worst part is it also meant they were nervous to eat homemade nuggets since. (A lesson also for not forcing kids to eat something!!!) I try them every now and then and finally they quite like them.
And this, this is the sleazy easy recipe to use.
Simple easy chicken nuggets
*Feeds one family with 2-3 children.
*For a childcare you would need to multiple the ingredients by 3 to accommodate for 20 x 3-4 year old children to be 1 serve of protein.
What you need is:
- 500g of breast chicken
- 1 egg (could totally do 2 Tbsp of water)
- 1/4 cup of flour ( I used GF too)
- 1/2 cup of bread crumbs (I used GF too)
- 2 tbsp of oil
What you do is:
- Cut the chicken into chunks and mix it together with the egg.
- Take out the chunks of chook and place them on a lined baking tray.
- Sprinkle over the breadcrumb flour mixture and toss to combine. Scoop up any excess mixture and discard.
- Drizzle over some oil and toss again.
- Pop into a preheated 180 degree oven and cook for 10 minutes.
- Take them out and schuzz them a bit and pop them back in the oven for another 5 mins.
Voila.
And yes, I dipped mine in tomato sauce.
These kind of simple recipes are just like the ones you will find in our menu plan range. I don’t do fancy.
They are also ridiculously perfect for a wrap or lunchboxes for wee fingers to pick at.
